Jersey Royal is a soft farm cheese made from whole milk. It has a slightly floral rind. Its butter and cream aromas also contain a lactic, rich and creamy taste.
Pairs best with champagne.
Second Tier: Zorita Al Syrah, Sheep, Raw, Spain
On the palate, its firm but smooth paste has sweet notes of ripe fruit. The smell of its crust is reminiscent of moist earth and wild mushrooms.
Pairs best with Tempranillo
Third Tier: Corsu Vecchiu, Sheep, Pasteurized, Spain
A traditional sheep’s milk cheese made on the island of Corsica in the Mediterranean Sea. This cheese comes in a small format wheel (about 4 pounds) and is aged for 6 – 9 months. As it ages, it develops beautiful salty, grassy and caramel-like flavours accompanied with a lovely wild herb aroma.
Pairs best with Pinot Noir
Fourth Tier: Don Heli Rosemary ‘Manchego’, Sheep, Pasteurized, Spain
This is an aged cheese made from the milk of Manchega sheep. This ‘Manchego’ cheese is coated with fresh local rosemary and aged for 15 months. During the curing time, the cheese picks up just a little of the amazing aroma of the rosemary, adding an extra depth of flavour.
Pairs best with Sparkling wine
Fifth Tier: Cendre des Grand Jardins, Cow, Pasteurized, Quebec
Ripened for 45 days, this semi-soft cheese with a washed rind is made with pasteurized milk drawn from Charlevoix dairy farms. Within its pale brown rind is a smooth, creamy centre with a layer of food ash that lends it a subtle but fruity sweetness.
Pairs best with Riesling, Unoaked Chardonnay
