This cheese was created to produce a real specialty cheese in the Burgundy wine growing region, home to cheeses with character such as Epoisses, Chaource and Cîteaux. The objective was to make a generous cheese, full of character but not too powerful, which could be savoured with both white and red wine, or even a Crémant de Bourgogne.
